Do you have a veggie-phobic child? I think maybe you’re not the only one. My favorite trick with the littlest ones is to serve the veggies first. Make sure they are really hungry, then prepare the veggie first. Think of the meal as being served in courses. Now they are hungry and the only thing that’s ready is the veggie. Make them think they are lucky to be served anything so early in the meal prep. This really works with both of my kids, always has. It might not work for you. That’s OK. Remember that tastes change and they might like those brussels sprouts tomorrow (pan fried with garlic butter…..what’s the emoticon for mouth watering?). And you never know which recipe will change their minds.
I’ve been very fortunate that veggies are easy to get into my kids…………mostly. But, salads weren’t always the easiest for me. My kids don’t usually like dressings, and salads look kind of confusing. Here is a salad recipe that we all love. There are very few ingredients and the dressing is minimal. Hope you like it!
Massaged Kale Salad
1 bunch of curly kale (you can use the lacinto/dino kale, but curly is my preference because it gets more tender with touch)
1 large carrot
1/4 c. pepitas (roasted and salted pumpkin seeds), or use raw
1 1/2 tbslp olive oil
1 tbslp rice vinegar
salt and pepper to taste
After washing, shred the kale into very small bits and drizzle with olive oil. Massage the oil into the greens with your fingers thoroughly. Really press and squeeze, don’t just toss. Shred carrots and add to kale. Sprinkle with vinegar and add salt and pepper to taste. Toss. Top with pepitas.
